I was just looking in Ray Daniels' book Designing Great Beers and he says that the average sacc temp for Bohemian Pilsners in his sample data (taken from the National Homebrew Competion final round for two years I believe) was 153*F. He also said that 50% of the recipes used a protein rest, and only one used a decoction.
