Hefenlyweizen

The first all grain hefeweizen I brewed. Customized from Clone Brews to have the bitterness and color I wanted. THIS IS A BATCH SPARGE WHICH IS WHY EFFICIENCY IS POOR!

Beer: Hefenlyweizen Style: Weizen/Weissbier
Type: All grain Size: 5 gallons
Color:
7 HCU (~5 SRM)
Bitterness: 16 IBU
OG: 1.054 FG: 1.012
Alcohol: 5.4% v/v (4.3% w/w)
Water: All spring water from Wal-mart.
Grain: 7 lb. German Pilsner
5 lb. Wheat malt
1.5 lb. German Munich
Mash: 53% efficiency
Batch sparged - 2.75 gallons 176°F strike water for 90 minutes for mash temperature of 153°F. Added 2.5 gallons 156°F water before draining. Recirculate until clear, drain into kettle. Added 3.3 gallons 158°F 'sparge' water. Mixed will. Rest for 20 minutes. Recirculate runoff. Drain into kettle. Final volume 6.25 gallons (.50 gallon more water if humidity is low for boil off)
Boil: 60 minutes SG 1.043 6.25 gallons
Boil as usual.
Hops: 1 oz. Hallertauer Hersbrucker (3.9% AA, 60 min.)
1 oz. Hallertauer Hersbrucker (aroma)
Yeast: White Labs Hefeweizen WLP300. Make a starter and pitch at 78°F.
Log: Brewed on 2/13/2007.
Carbonation: 4.1 volumes Corn Sugar: 8.76 oz. for 5 gallons @ 70°F
