91g British chocolate
45g British black patent
45g Roasted barley
Steep: Steep for 20 minutes at 155°F
Boil: 30 minutes SG 1.122 1.25 gallons
1.75kg Dark malt extract
Add the extract and gypsum when teamperature reaches 185°F . Sustain a rolling boil for 2-3 minutes.
NOTE: Add the lactose (110 grams) to the boil for the last 15 minutes.
Hops: 18.1g Northern Brewer (8.5% AA, 60 min.)
Yeast: Wyeast 1028
Log: Brewed 10/26/08: Total Brew time 1 hour 50 minutes

Tasting: 11/16/08
Tasting: Initial aroma of a maltiness, the brew exhibits a beautiful dark color true to the Xingu Clone, a sweet initial taste with a slight hoppy after taste. The carbonation of the brew was perfect and a full body feel inside the mouth.
