High Seas Brewery Inland Sea Ale

Cream Ale brewed in the tradition of Gennessee Cream Ale. Basically, a light Pilsner Beer brewed at ale temperatures.

Type: Partial mash Size: 5.5 gallons

Bitterness: 17 IBU
OG: 1.049 FG: 1.008
Alcohol: 5.3% v/v (4.2% w/w)
Water: Used Burton Salts in filtered tap water. Local water is very soft (<60ppm Carbonate)
Grain: 1.75 lb. American 2-row
1 lb. American 6-row
2 lb. Flaked corn
Mash: 70% efficiency
Performed a mini-mash of all the grains. Mashed in with 1 gal. of water @ 168F. Temperature after dough in, 153F. Placed in preheated oven set to 170F for one hour. After mash, batch sparged with 2 gallons of water @ 175F.
Boil: 75 minutes SG 1.060 4.5 gallons
4 lb. Light malt extract
0 lb. Corn sugar
Add 1/2-1 Tbs. Irish moss in the last 15 minutes of the boil
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 5 min.)
Yeast: Used Safale-56 Ale Yeast. Good general purpose Ale yeast. Ferments in the 70-80F range with no problems.
Log: Fermented at 68-70F for 2 weeks.
Carbonation: Used 4 oz. corn sugar. Mini-Kegged 2.5 gallons. Bottled the rest.
Tasting: Green beer tasted great! After bottle conditioning, beer taste was very good. However, carbonation was very low. Will try to do something different next time.
