Celebration 3

Although this isn't a true IPA, since it is a clone of Sierra Nevada Celebration Ale, it is very hopped up! This is a wonderful, complex, very hoppy red ale. I can't get enough of this beer!!!

Type: Extract w/grain Size: 5.1 gallons

53 HCU (~23 SRM)
Bitterness: 47 IBU
OG: 1.065 FG: 1.020
Alcohol: 5.9% v/v (4.6% w/w)
Grain: 4.0 oz. American victory
1.0 lb. 8.0 oz. American crystal 60L
4.0 oz. Dextrine malt (Cara-Pils)
4.0 oz. Roasted barley
Steep: Steep grains until boil, then another 5 minutes longer.
Boil: 60 minutes SG 1.095 3.5 gallons
7.0 lb. Light malt extract
1.0 lb. Light dry malt extract
Hops: 1.0 oz. Cascade (5.6% AA, 60 min.)
1.0 oz. Chinook (11.9% AA, 60 min.)
.5 oz. Cascade (5.6% AA, 5 min.)
.5 oz. Centennial (9.7% AA, 5 min.)
.5 oz. Cascade (aroma)
.5 oz. Centennial (aroma)
Yeast: American #1056
Log: 4/29/00 Brewed.
5/10/00 Second fermentation and dry hopping.
5/17/00 Bottled
Carbonation: 2.9 volumes Corn Sugar: 4.99 oz. for 4.5 gallons @ 70°F
Although I used 5.0 ounces of corn sugar, only because they came that way, you could probably cut this down to get into the IPA range.
Tasting: Wonderful full flavor with slight caramel flavor, I think from the 5 minute boil of the grains. Very hoppy, wonderful taste!!!
