Two Hearts A.L.e

The one and only clone brew that I make. Based on Bell's Two Hearted Ale, this was brewed to celebrate the birth of my twins. It's nearly a dead-wringer for the real thing

Beer: Two Hearts A.L.e Style: India Pale Ale
Type: All grain Size: 5.5 gallons
Color:
10 HCU (~7 SRM)
Bitterness: 72 IBU
OG: 1.065 FG: 1.012
Alcohol: 6.8% v/v (5.3% w/w)
Water: 1 tsp of 5.2 Mash Stabilizer added to the strike water
Grain: 9 lb. Crisp Maris Otter
2.5 lb. German Vienna
1 lb. American victory
Mash: 76% efficiency
1.5 quarts/lb mash ratio. Heat 4.6 gallons strike water to 163°F to mash at a rest temperature of 152°F for 1 hour. Fly Sparge with 4.75 gallons at 175°F for 1 hour.
Add 1 oz of Centennial whole hops during the sparge (listed below as one of the 20 min additions)
Boil: 60 minutes SG 1.053 6.68 gallons
Add Irish moss if you can remember to, I never can, but the beer still clears.
Hops: 1 oz. Centennial (9% AA, 60 min.)
1 oz. Centennial (9% AA, 20 min.)
1 oz. Centennial (9% AA, 20 min.)
2 oz. Centennial (9% AA, 5 min.)
2 oz. Centennial (aroma)
Yeast: WYeast 1084 Irish Ale in 1/3 gallon starter
Log: Primary for 3 weeks, then rack onto 2 oz Centennial whole hops for dryhopping (aroma addition in the hops schedule above). bottle/keg after 10 days.
Carbonation: 1.9 volumes Corn Sugar: 3.07 oz. for 5.5 gallons @ 68°F
The Carb calculate says to use 3 oz of corn sugar. I usually measure by volume at 2/3 cups.
Tasting: I will add tasting notes when it's ready. This is a tried and true recipe, and have been told by quite a few that this tastes just like the Bell's offering.
