White Wedding Grand Cru
So my friends Dave and Carly are getting married.
I need a gift for them. They both REALLY love wit bier.
So this is what I made.
The labels are second to none. I changed the cover of the
origional "White Wedding" 45" to suit my purposes.
Oh yeah...the beer in the bottles is real good too.

Beer: | White Wedding Grand Cru | Style: | Belgian White (Wit)
Type: | Extract w/grain | Size: | 2.5 gallons
Color: |
|
Bitterness: | 12 IBU | |||||
OG: | 1.061 | FG: | 1.010 | |||||
Alcohol: | 6.6% v/v (5.2% w/w)
Grain: | .35 lb. Flaked wheat
Steep: | I put the flaked wheat in a grain bag and raised the temperature of the 3/4 of a gallon of water to near boiling over a period of 30 minutes. I then put the bag of grains in a strainer and poured the remaining 1/4 of the water for the boil over them...blah blah blah. (I emptied the bag to use for the corriander and orange peel later) |
|||||||
Boil: | 60 minutes | SG 1.153 | 1 gallons
4 lb. Wheat extract | ||||||||
During the last fifteen minutes of the boil I added .5 ounce of crushed corriander and .5 ounce of dried orange peel. |
||||||||
Hops: | 1 oz. Hallertauer Hersbrucker (3.5% AA, 60 min.) .5 oz. Hallertauer Hersbrucker (3.5% AA, 5 min.) .25 oz. Hallertauer Hersbrucker (aroma) |
|||||||
Yeast: | I prefer to use WYeast Belgian wheat over their Wit yeast because... well...I like it better. |
|||||||
Log: | It sat in the primary for 12 days or so at around 70°. Then I bottled it. |
|||||||
Carbonation: | 2.4 volumes | Corn Sugar: 2.35 oz. for 2.35 gallons @ 70°F
Tasting: | Son of a bitch! I really wish I had made a large batch of this, but my other stuff was occupied. I saved only one bottle for myself but I think I'm going to have to make it two. |
