Wheat's Up

This is my first attempt at a bavarian wheat

Type: All grain Size: 5.5 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 11 IBU
OG: 1.055 FG: 1.013
Alcohol: 5.4% v/v (4.2% w/w)
Water: None. I use Richardson Texas Tap. It is a medium hard water
heavy on the calcium.
Grain: 3 lb. American 2-row
2 lb. German Pilsner
5 lb. Wheat malt
Mash: 80% efficiency
Triple decoction mash. Dough in at 127° with rests at 155° and
167°. Sparge with 190° water.
Boil: 45 minutes SG 1.050 6.0 gallons
Hops: 1 oz. Saaz (3.75% AA, 45 min.)
Yeast: White Labs Hefeweizen Ale (WLP300) pitched at double the
recomended rate
Carbonation: 4.0 volumes Cane Sugar: 8.07 oz. for 5 gallons @ 70°F
Bottle conditioned two weeks.
Tasting: WOW! This has become my most popular beer. It has a nice
light flavor with the traditional banana and clove expected of
a Bavarian wheat beer.
