This is an outstanding wheat beer. Simple, yet worth the effort.

Set grains at 140 F, 30 min. Just cover the grain bed. Add boiling water to temp rise for 153 F, 60 min more. Yes 1.5 hours mashing. |

Boil: | 90 minutes | SG 1.047 | 16 gallons | |||||
Hops: | 2.0 oz. Hallertauer (4.25% AA, 90 min.) | |||||||
Yeast: | White Labs American Hefe' Weizen. One pint starter. 8 oz in each of the two 7 gal carbouys |

Log: | First wort all of hops. Put in bag and pour wort over the bag until full volume is reached adding heat to bring to boil the entire time. Leave hops in even through chilling. Ferments a little slow. Give it about 3 days in the primany. Then give it 7 to 10 days in the secondary. It will still have the distinctive stuff that just won't settle. |

Good head and good retention. Very white and bubbly. | ||||||||
Tasting: | Tastes better than a Palinar Hefe' Weissen. Same fruity character but doesn't have quite the long lasting bitter effect. |
