| Mash at 148*F for 75 minutes. | ||||||||

| Yeast: | Not sure about this one... I'll probably go with either Wyeast's French Saison strain or WL's Saison blend. I've heard people have a lot of attenuation issues with WLP565. Then again, if you can tame 565, it produces an excellent beer (tried a wit fermented with 565 produced by a local microbrewery, and it was wonderful). | |||||||
