2 oz. Belgian biscuit
12 oz. American crystal 40L
2 oz. American black patent
Steep: grains cracked and steeped at 150°F for 40 minutes
Boil: 60 minutes SG 1.079 3.5 gallons
7 lb. Light malt extract
boil timing started after hot break.
a pinch of irish moss added in final 15 minutes of boil.
Hops: 1.5 oz. Kent Goldings (5% AA, 60 min.)
Yeast: Wyeast Scottish Ale
Log: primary ferment @ 65°F for 2 weeks.
secondary ferment @ 65°F for 3 weeks.
prime with 3/4 c corn sugar at bottling time.
