North Coast Brown Ale

Brewed on Saturday, 08/30/97. A nice brown ale without the 'bite'
of some true Scotch Ales. Fermentation is run a bit cold for an
ale - 60F (17C)- but I'm usually a lager brewer and don't like the
taste of dicetyl in my brew caused by warmer temps.

Alcohol: 5.0% v/v (3.9% w/w)
Water: 1/4 tsp gypsum, 1 ml Lactic Acid per 3 gallon liquor.
Grain: 7 lb. American 2-row
12 oz. Homemade Aromatic (15min @350F)
1 lb. American crystal 40L
2 oz. American chocolate 450L
8 oz. Dextrine malt (Cara-Pils)
Mash: 76% efficiency
Rest @ 130F for 30 min. (3 gal)
Rest @ 158F for 30 min.
Heat to 165F - 15 min.
Started sparge @ 168F. Ran for 75 min - 4.5 gal sparge water volume.
Collected 6.5 gal for boil.
Boil: 70 minutes SG 1.041 6.5 gallons
4 oz. Molasses - Dark
Hops: .5 oz. Northern Brewer (8.8% AA, 60 min.)
.5 oz. Fuggles (4.3% AA, 30 min.)
.25 oz. Tettanger (3.8% AA, 30 min.)
Yeast: Wyeast 1338 from 1qt. starter.
Carbonation: Artificial - CO2.
Tasting: Similar to New Castle Brown Ale with a bit of Old Peculiar tossed
in.
