Beer: Honey White Style: English Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
8 HCU (~6 SRM)
Bitterness: 19 IBU
OG: 1.041 FG: 1.014
Alcohol: 3.5% v/v (2.7% w/w)
Grain: 2 lb. Belgian Pilsner
2 lb. Unmalted wheat
2 lb. DME American Wheat
Boil: 60 minutes SG 1.064 3.2 gallons
2 lb. Clover Honey
Start with water, DME, unmalted wheat, honey and bittering hops (.25oz Tettnager). Follow times and amounts below for the rest of the process.
NOTE: Overboiling may cause too much of the raw wheat's haze-forming protein to be released so keep it 5-6 mins.
Hops: 1.25 oz. Hallertauer (4.0% AA, 60 min.)
.75 oz. Tettnanger (4.2% AA, 5 min.)
.75 oz. Grated Lemon Peel (5 min.)
.25 oz. Tettnanger (4.2% AA, 0 min.)
Log: Fermentation tempature for both stages is 68-65°F. Primary fermentation time is ~5 days. It is ready ro track to secondary when the gravity has dropped below 1.025. Secodnary fermentation time is 20 days. Prime with 3/4 cup corn sugar (use white unless you want do darken the brew a little).
Tasting: This came out to be a semi-sweet beer. I am considering using more clove honey instead of corn sugar at bottling time.
