This is a VERY alcoholic brew. Lots of problems along the way, but it has turned out VERY nice.

Protien rest @ 128°f. Started raise after 5 minutes. Mashed @ 155°f. for 1 hour. Sparge for 1 hour collecting 14 gallons wort. 1 of the 4oz Nugget hops added to boiling pot at beginning of sparge for first wort hopping. Collected 7.5 gallons additional wort for a "small beer" | ||||||||

Log: | Brewed on 4/28/01 Fermented at 62°-72°f Fermentation stuck at 1.050, champagne yeast added, no effect. Amylase enzime added, fermentation started again. Racked to secondary on 7/5/01 and dry hopped with 1oz Cascade & 1oz Centennial in each carboy. |
