Bitterness: 30 IBU
OG: 1.142 FG: 1.012
Alcohol: 16.8% v/v (13.2% w/w)
Water: 1 tbsp gypsum in boil
Grain: 36 lb. British pale
Mash: 52% efficiency
Mash 40 quarts of water @ 167°F water to make 151°F mash. Mash for 90 minutes and collect wort.
Boil: 300 minutes SG 1.071 10 gallons
1 tbsp Moss Last 15 min
Hops: 2 oz. Fuggles (4.75% AA, 300 min.)
Yeast: White Labs, Super Yeast Built up to a half gallon.
Log: Primary 3 months 65°F
Secondary 3 months 65°F move to freezer for 1 month @ 32°F
Bottle and age for 5 years.
Carbonation: 2.0 volumes Corn Sugar: 0.75 oz. for 4.75 gallons @ 32°F
