Blackpowder Porter #3

I started this porter as a 7 gallon batch. I decided to change to a 6 gallon batch, which turned into a 5.5 gallon batch. I thought it would be like syrup, but it is the best porter I have made. I will definitely make this again. The high IBU's are offset by the complex maltiness.

Type: Extract w/grain Size: 5.5 gallons
Color:
144 HCU (~45 SRM)
Bitterness: 49 IBU
OG: 1.073 FG: 1.020
Alcohol: 6.8% v/v (5.3% w/w)
Grain: 1 lb. American crystal 20L
1 lb. American crystal 120L
10 oz. American chocolate
6 oz. American black patent
Steep: I steeped the grains for 45 minutes at 150 degrees
Boil: 60 minutes SG 1.057 7 gallons
5 lb. Light dry malt extract
3 lb. Dark dry malt extract
Hops: 1 oz. Perle (8% AA, 60 min.)
1 oz. Cascade (6% AA, 45 min.)
.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Cascade (aroma)
Yeast: I used White Labs chico yeast
Log: Primary fermentation was at 68 degrees for 8 days.
Secondary fermentation was at 68 degrees for 7 days.
3/4 cup corn sugar and condition for at least 3 weeks.
It really comes in after 4 to 5 weeks.
Tasting: I wouldn't change a thing. This is not a porter for the faint of heart. It has a high ABV and a complex taste. I was trying for something similar to a Sierra Nevada Porter, but I like this much better. If you like it heavy you will like this one.
