Puppy Porter

This recipe is an experiment in the re-use of some wit yeast. It is not meant to be an authentic porter, but its own unique style. It is classified and named a porter, as that it what it most closely resembles. It is also the same color as our chocolate lab puppy, hence the name.

Bitterness: 35 IBU
OG: 1.058 FG: 1.018
Alcohol: 5.1% v/v (4.0% w/w)
Water: Straight tap water from Austin Texas - no treatment
Grain: 9 lb. American 2-row
1 lb. CaraMunch
1 lb. Dehusked Chocolate
.5 lb. Flaked wheat
Mash: 70% efficiency
Single infusion mash at ~155°F for 60 min
Batch sparge - two batches
Boil: 60 minutes SG 1.048 6 gallons
1 oz Curacao bitter orange peel - last 15 Min
Hops: 1 oz. Kent Goldings (6.1% AA, 60 min.)
1 oz. Kent Goldings (6.1% AA, 15 min.)
1 oz. Kent Goldings (aroma)
Yeast: Reuse of White Labs wit yeast

Carbonation: Bulk primed - 3/4 cup corn sugar
Tasting: 11/16/01
Smooth and roasty. Very well balanced beer. Orange peel and fruitiness from yeast is difficult to detect, but beer has a well-rounded and full taste that would probably be missing without the orange peel and yeast. Overall and excellent beer, but I would not call it an authentic porter by any strech. I believe it will not hit its peak until at least January.
