Dirty Dog Porter

Hoppy, dry, slightly chocolatey. Very smooth. A little on the bitter side.

Grain: 8 oz. American chocolate
1 lb. American black patent
Steep: 45 min @ ~160
Boil: 60 minutes SG 1.107 3 gallons
1 lb. Light malt extract
6 lb. Amber malt extract
1 lb. Brown sugar
1 tsp Irish Moss @ 60 min
Hops: 1.00 oz. Chinook (12% AA, 60 min.)
1.00 oz. Cascade (6% AA, 30 min.)
0.51 oz. Kent Goldings (5% AA, 15 min.)
.5 oz. Kent Goldings (aroma)
Yeast: 2 packages of Multons dry yeast
Log: Primary - 1 wk
Secondary - 3 wk (could've been 1 wk -- we forgot about it...)
3 weeks in bottles
Carbonation: 3/4 cup bottling sugar
Tasting: It's bordering on too bitter, for my taste. It has a sharp "middle taste." To smooth it out, I would recommend using something other
than Chinook for bittering hops -- Chinook is really over-the-top
for this style of beer.
