Blackberry Porter
This is the base beer. Top up to 2.5 gallons. The extra quart or 2
comes from the berries. Rack over 24-36oz (12 oz per gallon) of
blackberries in secondary and hold for 2-3 weeks. Recommend putting
frozen blackberries into hops bag (boiled hops bag - sanitize
sanitize sanitize!!) The beer is >5% alcohol. You can pasturize the
blackberries (I will) or not...

Steep: | Steep grains in 2 cups water for 30 minutes at 150. sparge in strainer slowly for (15 mins) with 170(f) water (2qts). |

Boil: | 60 minutes | SG 1.086 | 2 gallons | |||||

Add 1/2tsp irish moss at 10 minutes. My Brewers Gold hops are only 6%AA so the boil is 60 minutes. If you have higher AA use this recipe calculator to determine the adjustments. 8%AA, decrease the boil to 30mins. Target 20IBU or so |

Yeast: | Rehydrate and pitch 1pk Danstar Nottingham yeast. Boil 2/3 cup water before begining the brew process. Cover with wet paper towel and set aside. At end of brewing, when wort is cool to 80-85, take 1/3 cup with a sanitized measure and add to the water. Check water temp - if between 80-90, add yeast packet and recover. Wait 30 mins then stir should be foaming a bit by then) and pitch. |

Log: | Racked to secondary on 8/15/1998 - one Grolsh bottle reserved to taste base beer. In secondary - 36oz previously frozen fruit (24oz Blackberries, 12oz Blueberries) inside a hops sack. Fermentation restarted - continued 2 days. Bottled on 8/30/1998. |

Tasting: | Reserved bottle of porter base tasted 9/6. Wife says it's the best beer I've ever made. I think it's damn good too! Conditioned in bottles for 14 days. This beer if beyond good. The liberty hops go well with the tartness of the the blackberries! Only 12 bottles left... The text of this recipe contains changes that I will make to improve the beer - a bit of extra malt and extra crystal too. |
