Chocolate HazelNUT Honey Porter
I know this recipe may sound a bit convoluted with all of the adjuncts competing for space on those precious taste buds of yours. But this amalgamation of ingredients dances harmoniously on the tongue as if it were a ballet!

Water: | Tap beeeeeyotch! For the boil at least. I use Poland Spring refrigerated gallons for top up water. | |||||||

Steep: | ~2 gallons of water to steep specialty grains (crystal, chocolate, black patent, hazelnuts come into play later on...). Start with lukewarm water. Set stove to med high heat. After about 20 mins check that temp isnt at or over 165. If its approaching remove from heat and allow grains to steep for a full 30 mins. Sparge grainbag with 1/2 gallon HOT tap water for final boil volume of 2.5 gallons. | |||||||

5 lb. Amber dry malt extract 4 oz. Brown sugar 1 lb. Honey |

Hops: | 1.5 oz. Cascade (6% AA, 60 min.) .5 oz. Cascade (aroma) |

Yeast: | Your preference of ale yeast that gives a clean, dry taste. Preferably with a higher attenuation. | |||||||
Log: | Steeped grains for 1/2 hour, pulled out spent grains. Brought to boil. Removed from heat and added malt extract and brown sugar. Brought wort to boil and added 1.5 oz Cascade bittering hops. Start timer. Boil for 45 mins then add melted chocolate, honey, and hazelnuts. Boil for 10 mins then add 1/2 oz Cascade for aroma. Boil for 5 mins. Strain out ~1/2 of the hazelnuts, cover wort with sterilized lid and let sit in sink of cold water for 20 mins (cool wort to about 90-95*). Pour wort into primary on top of 2 gallons refrigerated Poland Spring. Top up to 5 gallons. Should put you right at pitch temp of 70*! Instructions for Roasting Hazelnuts: Crush up raw hazelnuts in a food processor (not to a powder, just kind of mince them). Roasted on a cookie sheet under the broiler for about 3 minutes. |
