Bitterness: 29 IBU
OG: 1.064 FG: 1.015
Alcohol: 6.4% v/v (5.0% w/w)
Grain: 1 lb. American crystal 10L
0.5 lb. British chocolate
0.5 lb. British black patent
Steep: Place grains in grain bag and steep at 160°F for 45 minutes in 2.5 Gallons of water.
Sparge (do not squeeze) with 0.5 Gallons of water at 170°F.
Boil: 60 minutes SG 1.107 3 gallons
8 lb. Light malt extract
Bring to a boil and add Alexander's Pale malt extract.
Add 1tsp Irish Moss last 10 minutes of boil.
Hops: 1.5 oz. Northern Brewer (8.5% AA, 60 min.)
0.5 oz. Kent Goldings (5% AA, 15 min.)
0.5 oz. Northern Brewer (aroma)
Yeast: Wyeast 1028; London Ale Yeast
Log: Primary Fermentation 7 days at 68°F
Secondary fermentation 7 days at 68°F
Tertiary (bottle conditioning)2-3 weeks at 68°F
Carbonation: 2.0 volumes Corn Sugar: 3.06 oz. for 5 gallons @ 68°F
Dissolve sugar into 1 pint of boiling water. cover and cool to room temperature and add to secondary. Gently swirl and allow to settle.
