Bitterness: 31 IBU
OG: 1.049 FG: 1.013
Alcohol: 4.7% v/v (3.7% w/w)
Water: Fivestar 5.2 and crushed campden tablets in all brewing water.
Grain: 15 lb. American 2-row
2 lb. Wheat malt
2 lb. American crystal 60L
2 lb. Belgian Special B
1 lb. British chocolate
1 lb. Roasted barley
Mash: 66% efficiency
Mash in with 1.25 qt/lb at 152F and recirc for 1 hour. Raise to 170F for 10 minutes and sparge to collect 12 gallons.
Boil: 60 minutes SG 1.045 12 gallons
Hops: 2 oz. Northern Brewer (7% AA, 60 min.)
.4 oz. Perle (8% AA, 45 min.)
1 oz. Saaz (2.6% AA, 30 min.)
Yeast: Danstar Nottingham - 1 week at 70F, 1 week at 60F, no secondary.
