Steep: steeped grains at 154° for 30 min. Munich steeped for 45 minutes
Boil: 60 minutes SG 1.119 3.5 gallons
9.6 lb. Light malt extract
10 oz. Maple syrup
Irish Moss at 15 minutes. 5 oz. Pure maple syrup at boil, 5 oz. at knockout
Hops: 1 oz. Centennial (10.5% AA, 60 min.)
1 oz. Willamette (5% AA, 30 min.)
1 oz. Cascade (6% AA, 15 min.)
Tasting: Big Beer. Sweet, but not cloying. Well balanced.
