37 HCU (~18 SRM)
Bitterness: 51 IBU
OG: 1.072 FG: 1.017
Alcohol: 7.2% v/v (5.6% w/w)
Grain: 9 oz. American crystal 40L
5 oz. British chocolate
Steep: Heat 1 gallon of water to 155F. Remove pot from heat and steep for 30 min. at 150F. Sparge with 1/2 gallon of 150F water.
Boil: 60 minutes SG 1.066 5.5 gallons
4 lb. Light malt extract
4.5 lb. Light dry malt extract
Boil the malt tea with hops only.
15 minutes left: Add the extract
2 oz. of malto Dextrin
1/2 inch Vanilla Bean
1/4 tsp. ground Nutmeg
1/4 tsp. crushed anise
1 tsp. Irish Moss.
4 minutes: 1/2 tsp. crushed juniper berries
1 minute: 1/2 inch Vanilla Bean
1/4 tsp. crushed Anise
Hops: 1 oz. Northern Brewer (10.6% AA, 60 min.)
.75 oz. Simcoe (12.7% AA, 15 min.)
.25 oz. Simcoe (aroma)
Yeast: Wyeast 1272 American Ale II pitched from a starter.
