Recirculation mash for 90 minutes at 150°, sparged at 170° sending water through twice. | ||||||||

Yeast: | Used Wyeast #1084 Irish Ale, in half cup starter of sterilized wort made pulled before the boil. | |||||||
Log: | Primary for 7 days at 65° and then secondary for 14 at 70°. After bottling let sit at least tree weeks. I know its tough but a fuller flavor will develope. | |||||||

Would advise bottler to tap bottles right before capping to evacuate air. | ||||||||
Tasting: | Pretty much the real thing. Nice and dry and crisp. A lot of good body from all the flaked barley but it might have used a little more carbonation. This is not a beer for the feint of heart. It is closer to the Extra Stout that is bottled as opposed ot the draught version. |
