First time for a stout, and I wish all my brew came out so well!
Even Papa Meins liked it and he's not a stouty guy!!

Mash: | 75% efficiency | |||||||
Added 2 1/4 gal water to grains in mash tun at 174° F. Temperture dropped to 163° F, added two cups cold water brought temp to 156°, covered mash tun and placed in the oven at 170° kept the oven on at 170° for ten minutes then turned oven off. Mash temp held at an even 154 for 80 minutes (10 minute beggining period temp dropped from 156° to 154°) I monitor the temp w/a Taylor Digital Thermometer which has a wire lead. | ||||||||

Boiled 60 minutes total. Added 1 Tablespoon Irish Moss the last 15 minutes of the boil. (pre-soaked the Irish Moss the night before in 1 cup of water) | ||||||||
Hops: | 1.25 oz. Kent Goldings (5.3% AA, 60 min.) 0.75 oz. Kent Goldings (5.3% AA, 30 min.) |

Yeast: | White Labs Pitchable Irish Ale Yeast #WLP004. Pitched yeast on Sunday at 4pm. Monday evening had a nice brown Krausen working, racked to secondary on Wednesday evening. | |||||||
Log: | The wort cooled down fast using a spiral garden hose as a heat transfer, which worked quite well. Pitched yeast Sun 1/26, after three days in primary, racked fairly clean into secondary fermenter. 25 days in secondary and bottled on Feb. 22, 2003. using 1/2 c. corn sugar and 2 c. water, boiled and cooled | |||||||
Carbonation: | 2.0 volumes | Corn Sugar: 1.79 oz. for 3.0 gallons @ 66°F | ||||||
Tasting: | After bottleing I had half a glass left over and it quite drinkable. Two weeks in the bottle it was nicely carbonated and tasted fine but still a little green. Six weeks in the bottle and it was smooth without a heavy flavor nor too sweet. |
