152°F for 2 hours with 3.25 gallons of water. Sparge lasted about 45 minutes with 5 gallons of 170°F water. |

Yeast: | Wyeast 1084 XL pack. No starter. | |||||||
Log: | Brewed on Jan. 29, 1999. Primary @ 68°F for seven days. Secondary @ 68°F for fifteen days. Bottled on Feb. 19, 1999. Half went into a Party Pig and the rest in 12 ouncers. |

Tasting: | The Pig was ready to go after a week. The beer has a really dense head that doesn't give up. The taste is just outstanding. Roasty and malty up front with a nice firm bitterness. A bit of sweetness accompanied by a nice dark chocolate character in the middle and a pleasant roatiness in the finish that stays with you until the next gulp. It has a nice hearty body that backs all of this up very well. I hope the bottles will be this good. I don't think this batch has a long future. |
