Log: | very aggressive fermentation 3 days in primary racked to secondary w/ blowoff tube and 2 oz. saaz hops for aroma.(pellets) after another 3 days fermentation slowed drastically changed out blowoff for airlock 2 weeks bulk conditioned bottled in exactly 21 days from start. |

Carbonation: | 2.0 volumes | Honey: 3.54 oz. for 5 gallons @ 70°F
disolve 4-5 oz. of orange blossom honey in 2 cups boiled water and stir into bottling
Tasting: | after 3 weeks ageing this stout is perfectly fine to drink however still has a week carbonation{due to the honey i think} taste is dark and surprisingly smoky and rich. Robust flavor and almost a meal in itself, very substantial in viscosity and mouth feel. I think this will age beautifully! Maybe next time Ill add orange peel in secondary for a bit more citrus. |
