Mash: | 70% efficiency | |||||||
Mash grains in 2 gallons of at 150-155 water for 90 min. Strain and Sparge w/ 6 qts 170 degree water into brew kettle. | ||||||||
Boil: | 75 minutes | SG 1.156 | 3 gallons | |||||
7 lb. Light malt extract | ||||||||
Add LME and bring to boil. After hot break add all Northern Brewer and licorice start 60 minute timer. @ 45 min add 1 oz each Fuggles and Goldings. @ 30 min add remainder of hops and Irish Moss. @ 60 min remove from heat and force cool. Attached blowby rig. ALWAYS use a blowby when brewing this beer | ||||||||
Hops: | 4 oz. Northern Brewer (8.5% AA, 60 min.) 2 oz. Fuggles (4.75% AA, 30 min.) 2 oz. Kent Goldings (5% AA, 30 min.) |

Yeast: | Wyeast Irish Ale in 60 - 64 oz starter slurry. | |||||||
Log: | Ferment @ 65-68 degrees for 7 - 10 days. Rack over to secondary. I add 4TBS polyclar to 4 oz sterilized water to carboy before racking. Ferment for at least another 7 - 10 days. |

Carbonation: | 3/4 cup priming sugar to 1 cup water. Bottle as usual. | |||||||
Tasting: | Dark, rich, complex and very warming. Wonderful combination of roasted tones w/ the licorice and smoothness added from the oatmeal. This is a killer brew. It came in right @ 8.5%. Perfect to ring in the New Year. |
