Mad BoRIS

Mad BoRIS is an Russian Imperial Stout that won 2nd place in "Milds, Porters and Stouts" in the 2009 National Craftbrewing Festival in Sutton, UK. While not entirely historically accurate (roast barley, crystal and brown sugar would never have been used), I don't think it suffered at all.

Bitterness: 85 IBU
OG: 1.090 FG: 1.022
Alcohol: 8.7% v/v (6.8% w/w)
Water: Local Oxfordshire (UK) water; Treat with 1 crushed campden tablet for Chlorine removal. Alkalinity ~190ppm as CaCO3.
Grain: 6kg British pale
375g Wheat malt
375g British amber
375g British crystal 50-60L
375g British chocolate
375g Roasted barley
Mash: 69% efficiency
67° 2hr mash
Boil: 120 minutes SG 1.062 28 liters
0.20kg Brown sugar
5g Irish Moss added with 15min remaining
Hops: 100g Kent Goldings (5.6% AA, 120 min.)
20g Target (9% AA, 120 min.)
Yeast: Safale 04 - 22g dried yeast, rehydrated in 200ml water at 30°C.

Carbonation: Batch primed with 25g table sugar prior to bottling
