New Sailfish Ale
This is a 5 gallon batch I have brwed a couple of times. Fairly simple. It has turned out really nice, especially since I started using the converted Igloo coolers ith Torpedo strainers for mashing.

I use 2 Igloo 5 gallon water coolers converted to mash tuns with the Torpedo strainer and valves. Water is mashed at as close to 155 deg as I can keep it. Mash is sparged with 175 deg water. I do not recirculate or add wort to the mash--once through the mash the wort goes into the boiling pot.

Irish moss-1 teaspoon at 45 minutes into the boil.

Yeast: | Yeast is Safale SO5. I make a starter from regular DME and start the yeast 2 - 3 days prior to boil/pitch. I use a 1 quart glass jar equipped with stopper and air lock.
Carbonation: | This is bottle conditioned ale--I use 1.25 cups of regular DME mixed in a priming tank imediately before bottling. Beer is bottled in 12 or 16 oz. brown bottles and capped. |
