Alcohol: 4.4% v/v (3.5% w/w)
Grain: 5 lb. 8 oz. American 2-row
1 lb. 4 oz. American crystal 20L
2 lb. Rye (raw)
4 oz. Rice Hulls
Mash: 80% efficiency
Single infusion mash with 11.7 quarts at 167F to settle mash at 152F. Hold for 60 minutes. Decoction mashout to 160F for 10 minutes. Continuous sparge with 170F water to collect 7.5 gallons in brewpot.
Boil: 60 minutes SG 1.034 7.5 gallons
Hops: 1 oz. Hallertauer (3.2% AA, 60 min.)
.25 oz. Hallertauer Hersbrucker (4% AA, 60 min.)
.5 oz. Hallertauer (3.2% AA, 20 min.)
.75 oz. Hallertauer Hersbrucker (4% AA, 20 min.)
1 oz. Mt. Hood (6% AA, 5 min.)
Yeast: White Labs 862 "Cry Havoc" in a 1 quart starter.
Log: 10-14 days primary at 58F, cold crash for two days at 40F, rack to keg.
Carbonation: 2.0 volumes Keg: 6.8 psi @ 40°F
