Vienna Ale

This is one of my best, results were better that expected. A friend stated that it had the taste of a German beer.

Type: Partial mash Size: 5 gallons
Color:
8 HCU (~6 SRM)
Bitterness: 32 IBU
OG: 1.050 FG: 1.014
Alcohol: 4.6% v/v (3.7% w/w)
Water: Well water, no filtration
Grain: 0.98 lb. American Vienna
7.8 oz. Flaked wheat
Mash: 77% efficiency
60 min. @ 160, sparge with 1 gal 170 water
Boil: 60 minutes SG 1.100 2.5 gallons
4.69 lb. Light dry malt extract
1t Irish Moss last fifteen min.
Hops: 0.94 oz. Chinook (12.5% AA, 60 min.)
0.47 oz. Perle (5.5% AA, 30 min.)
0.24 oz. Perle (5.5% AA, 15 min.)
.25 oz. Perle (aroma)
Yeast: California Ale yeast (white labs liquid)
Log: The .25 oz Perle hops was dry hopped, first time using this method.
Just started this brew on 11/15/00 11/24/00, racked, 12/03/00 bottled, 12/17/00 first taste, very suprized, will be even better with alittle more conditioning.
Carbonation: 3.2 volumes Corn Sugar: 5.65 oz. for 4.5 gallons @ 68°F
used 1c corn sugar
Tasting: first try at dry hopping, will continue to, Has a pleasant europian taste due to the Vienna Malt, dry crisp yet a slight malty after taste. Maybe next time add just a bit more hops to the dry hopping.
