Ben's Amber Ale

Great Amber Ale with universal appeal.

Type: Extract w/grain Size: 5 gallons
Color:
24 HCU (~13 SRM)
Bitterness: 39 IBU
OG: 1.057 FG: 1.011
Alcohol: 5.9% v/v (4.7% w/w)
Water: LA Tap water with 1 tsp. gypsum
Grain: 1 lb. American Vienna
4 oz. American crystal 40L
4 oz. American crystal 60L
8 oz. Dextrine malt (Cara-Pils)
Steep: Steep grains in 2 quarts water warm to 160° F and let rest for 45
minutes. Sparge with 2 quarts water that has been heated to 160° F.
Boil: 60 minutes SG 1.082 3.5 gallons
6.6 lb. Amber malt extract
Add 2.7 Gallons to the sparge for a 3.5 Gallon boil.

1 tsp Irish Moss in last 20 minutes of boil.
Hops: .75 oz. Chinook (12% AA, 60 min.)
1 oz. Cascade (6% AA, 30 min.)
.5 oz. Willamette (aroma)
Yeast: WYeast 1272 American Ale II pitched from the tube.
Log: Primary ferment 4 days @ 70° F
Secondary ferment 1 week @ 70° F
Bottle conditioned 2 weeks
Carbonation: 2.4 volumes Corn Sugar: 3.78 oz. for 4.5 gallons @ 70°F
Tasting: I have a friend who is from Germany. He almost cried when he tasted
this fine beer. "The best beer in America." It made him homesick.
