Steep: | - Steeped the caramel and melanoidin grains (1lbs each) in 1 gallon of water at 160°f for 30 minutes. - Poured everything in a filtered funnel and allowed the liquid to drain into the 3 gallons of post-boiled wort. |

- Brought 2.5 gallons of water and 6.6lbs of malt extract to boil for 60 minutes. - Added hops at various stages of boil. Did not add too many hops since I wanted this beer to be less bitter. - Added Irish Moss 50 minutes into boil. |

Yeast: | - Liquid Yeast: Wyeast 1056 American - Did not do starter. I bought the ingredients for this batch in the morning and wanted to start fermenting the same day. - Kicked of yeast @ 4:00PM and pitched it at 10:00PM. |

Log: | - Added teaspoon of gelatin to 2 cups of hot water (not boiling) and added it into carboy. - Color is darker than I originally expected. |
