Hopewell Amber Ale (Revised)

I thought up this recipe after touring the Samuel Adams Brewery in Boston.

Beer: Hopewell Amber Ale (Revised) Style: American Amber Ale
Type: Extract w/grain Size: 5 gallons
Color:
0 HCU (~0 SRM)
Bitterness: 81 IBU
OG: 1.000 FG: 1.014
Alcohol: -
Water: Used Gallon bottles of store bought spring water.
Grain: 8 oz. Crystal Malt 2 row
Steep: Steep grains to 170 degrees for 30 minutes
Boil: 60 minutes SG 1.000 2.5 gallons
3.3 lb. Amber malt extract
3.3 lb. Light malt extract
Use 1 tsp of Irish Moss at 45 minutes into boil.
Hops: 1 oz. Galena (13.1% AA, 60 min.)
1 oz. Tettnanger (3.7% AA, 15 min.)
2 oz. Hallertau (aroma)
Yeast: 1 15gm packs of Cooper's dry ale yeast
Log: Add one oz Hallertau hop pellets 55 minutes into boil and turn off heat. Primary fermentation for 1 week. 2 weeks in secondary with one oz Hallertau hop pellets (dry hop) . Primed with corn sugar. Conditioned in the bottle for 2 weeks.
Tasting: Nice tasting brew. Good mouth feel and alot of body. Hoppy aroma. Goes good with red meats.
