Big Red

This beer was intended to be a ~7% ABV red ale.

Type: Extract w/grain Size: 5 gallons
Color:
21 HCU (~12 SRM)
Bitterness: 33 IBU
OG: 1.068 FG: 1.012
Alcohol: 7.3% v/v (5.7% w/w)
Water: Plain old tap water.
Grain: 1 lb. German CaraRed
8 oz. Dextrine malt (Cara-Pils)
8 oz. Belgian CaraMunich
Steep: Steeped the grains in a nylon bag for 30 min.
Boil: 60 minutes SG 1.137 2.5 gallons
7 lb. Light dry malt extract
1 tsp of Irish Moss 15 min before end of the boil.
Hops: 1 oz. Cascade (6.3% AA, 60 min.)
1 oz. Liberty (4.5% AA, 60 min.)
1 oz. Crystal (4% AA, 45 min.)
1 oz. Vanguard (4.9% AA, 45 min.)
1 oz. Argentina Cascade (aroma)
Yeast: White Labs California V yeast used with a .5 L starter culture.
Log: Very active fermentation for almost a week. Racked to secondary after three weeks and added gelatin finings. One week in the secondary cleared the beer nicely and was bottled.
Carbonation: Primed with 3/4 cup of sugar.
Tasting: Beer had a nice malt character and was well balanced with hops. Beer wasn't as red as it could have been, maybe try more CaraRed next time.
