Harvey's Home for the Holidays
My second attempt at a 'spiced holiday ale'. Folks seemed to enjoy it judging by the rate at which it was imbibed! Could have used a little more spice in my opinion to give it that holiday kick, but I'm certainly not complaining.

Steep: | Add grains to cold water and bring to 160°F. Steep at 160°F for 20-30 minutes. | |||||||

3.3 lb. Light malt extract 1 lb. Amber dry malt extract 1 lb. Honey |

Add 1 tsp ground ginger, 2 tsp ground nutmeg and 1 tsp ground allspice at 35 minutes (i.e. boil for 10 min). | ||||||||
Hops: | 1 oz. Cascade (5.9% AA, 45 min.) 1 oz. Fuggles (4.1% AA, 15 min.) |

Tasting: | This was a well balanced beer in my opinion. Not too bitter or malty. Next time I will add more of the spices. Possibly add an orange peel for the last 15 minutes of the boil. |
