Water: | Steeping water: Mix 1 gallon tap water with 1 gallon of distilled water because of high residual alkalinity. Add 1/4 tsp. sodium chloride. Use all tap water following steep as residual alkalinity doesn't matter for extract brews. |

Steep: | Steep grains in treated water at 155°F for 45 minutes. Tea bag a few times and let grain bag drip until it stops. | |||||||

Add a Whirlfloc tablet with 10 minutes remaining in the boil. Note only 5.75lbs of extract is boiled. The other 0.25lbs is contributed by the starter. Aroma hops added at flameout. |

Tasting: | Racking to secondary: Perfect! Bottling: Perfect! Tasted after in the bottle for about 4 weeks and fridge for about 2 weeks. This is a pretty good beer. There is a bitterness that is slightly unpleasant about 2 seconds after I swallow. Not sure what that's from. |
