20 HCU (~12 SRM)
Bitterness: 34 IBU
OG: 1.070 FG: 1.014
Alcohol: 7.2% v/v (5.6% w/w)
Water: 1 tsp gypsum and 1 TBS 5.2 mash stabilizer.
Grain: 11 lb. Pale 2-row (US)
2 oz. Honey Malt
2 oz. Chocolate (US)
8 oz. Crystal 80L
1 lb. Cara-Pils
Mash: 80% efficiency
To make for a less fermentable, more complex and malty brew, mash at higher temp of about 157°F for 60 minutes. Raise temp to 170°F and hold for 10 min. Continuous sparge with 170°F water to attain 7 gal in brewpot.
Boil: 60 minutes SG 1.055 7.0 gallons
4 oz. Wildflower Honey
1 tsp Irish Moss (Boil last 15 minutes)
4 oz honey (Boil last 5 min)
1 stick Cinnamon (Boil last 5 min)
¼ tsp Cardamom (Boil last 5 min)
1/8 tsp Nutmeg (Boil last 5 min)
8 whole Cloves (Boil last 5 min)
Hops: .67 oz. Amarillo (8.6% AA, 60 min.)
.67 oz. Amarillo (8.6% AA, 30 min.)
.67 oz. Amarillo (aroma)
Yeast: White Labs 013 in a 1 qt starter
Log: add ¼ cup pure vanilla extract when racking to secondary
