Ungrateful Little Bastard Ale

Beer: Ungrateful Little Bastard Ale Style: American Amber Ale
Type: Extract w/grain Size: 5 gallons
Color:
35 HCU (~17 SRM)
Bitterness: 28 IBU
OG: 1.073 FG: 1.012
Alcohol: 7.8% v/v (6.1% w/w)
Water: Use Bottled Water or 2 gallons of bottle water and atleast 8 pounds of ice to total 5 gallons in fermenter.
Grain: .50 lb. American 6-row
.25 lb. Wheat malt
.50 lb. American victory
.50 lb. British amber
.50 lb. American crystal 120L
Steep: Put grains in grain bag. Heat 2 gallons of filtered water along with 1tsp brew saltz to 160°F. Turn off heat add grain bag ( Do NOT ADD GRAINS TO WATER ABOVE 165°F) Let temperture rest down to 152°F about 25 minutes. stir grain bag gently from time to time.Remove grain bag and let drain over pot (DO NOT SQUEEZE BAG) when done draining discard grains. with heat off add malt extracts turn on heat stir until boil starts. When boil starts take note of time and add Columbus Hops boil 30 minutes add Chinook hops boil another 25 minutes add Cascade hops along with the Irish Moss boil for 5 minutes turn off heat cool and to add to fermenter bring to up to 5 gallons pitch yeast when temp is 80°F or below
Boil: 60 minutes SG 1.182 2 gallons
5 lb. 0 oz. Light malt extract
4 lb. 0 oz. Amber malt extract
1tsp. Brew Saltz
1tsp. Irish Moss last 5 minutes of boil
Hops: 1 oz. Columbus (14% AA, 60 min.)
1 oz. Chinook (12% AA, 30 min.)
1 oz. Cascade (6% AA, 5 min.)
Yeast: Wyeast 1056 American Ale
Log: Ferment at 68°-72°F You can also go from primary to secondary after 5 days and leave in secondary for 7 days
Carbonation: Heat 12oz water and 3/4 cup of dextrose sugar in microwave for 2 minutes then add to bottling bucket stir gently but thoroughly. bottle and cap. Store at room temperture 7-10 days then chill as needed.
