This is a tasty beer that has German character but with an American flair

Mash for 1 hour at 156° F recieculate last 15 minutes. | ||||||||
Boil: | 90 minutes | SG 1.053 | 15.5 gallons | |||||

Hops: | 50g Spalt (5.3% AA, 90 min.) 30g Willamette (5% AA, 90 min.) 20g Spalt (5.3% AA, 30 min.) 20g Willamette (5% AA, 30 min.) |

Yeast: | Wyeasst 1272 American II. 1 pint statrter. | |||||||
Log: | Ferment at 70° F for 2 days. Transfer to secondary fermentor until finished. Chill to 50° F for 1 day then to 34° F for 2 days to clear. This is a method of what I learned from a microbrewer to do a "fast lager" and will clear the beer to a much greater extent. You don't have to use this method but I like it. |

Carbonation: | 2.6 volumes | Keg: 10.2 psi @ 34°F | ||||||
I turn the pressure to 25 psi and turn the keg upside down and shake it until the bubbling decreases. Then I turn it to 10 psi and shake more until I get the carbonation like I want it. I can have a carbonated beer in 10 minutes and enjoy my craft. |

Tasting: | This has been a favorite with many of my friends. They have gotten off the cheep beer as a result. I keep this as a stock beer and it is always on hand, ENJOY!!!! |
