Steep: Mash grain in 7 qts water @ 158° F
Boil: 60 minutes SG 1.068 6 gallons
7 lb. Light malt extract
6 oz. Brown sugar
Irish Moss as necessary.
1 oz sweet orange peel last 15 min.
2 cinnamon sticks last 5 min.
0.25 oz cloves last 5 min.
Hops: .5 oz. Mt. Hood (4.5% AA, 60 min.)
.5 oz. Centennial (10.5% AA, 60 min.)
.5 oz. Chinook (12% AA, 60 min.)
Yeast: Wyeast 1056
Carbonation: Keg--Force Carb
Tasting: a little too much cinnamon and clove. will reduce next time...
