This is my experimentation based on the Brewers Best HopNog 2011 kit.

Steep: | Began the steep at 158, flame off, lid on and it held well. Steeped for 60 minutes ending at 145 degrees. Fly sparged with 2 quarts water at 150 degrees. | |||||||

Added the bittering hops as it was warming to boil. Added LME at boil, added DME with 10 minutes remaining. | ||||||||

Yeast: | White Labs Belgian Strong Ale Liquid yeast #WLP-545. It erupted at opening and I lost some of it. I added 2 teaspoons of Safale S-04 to help achieve a dry finish. | |||||||
Log: | Brewed on 11/12/11. Cascade whole hops will be added at racking as a dry hop. 11/18 - still a little airlock activity and it smells great. |
