1.5 lb. Dextrine malt (Cara-Pils)
Steep: Partial mash Vienna in 1 gallon for 60 min. At 150 rinse 2x in boil pot 2 gallon then join and steep rest of grains for 60 min
Boil: 60 minutes SG 1.128 3 gallons
9 lb. Light malt extract
15 min Irish moss
15 min 2.5 oz fresh shredded ginger
5 min 1 bunch/handful each lemongrass, basil, Thai basil, mint, 5 lime zest, .5oz bitter orange peel.
Hops: 2 oz. Centennial (10.5% AA, 60 min.)
1 oz. Centennial (10.5% AA, 45 min.)
1 oz. Centennial (10.5% AA, 5 min.)
1 oz. Centennial (10.5% AA, 1 min.)
.5 oz. Brewers Gold (aroma)
1 oz. Centennial (aroma)
.5 oz. Saaz (aroma)
