Mash grains at 150°F at 1.5 quarts per lb. of malt (6 quarts) for one hour. Sparge with 2.5 gallons of 170°F water. | ||||||||
Boil: | 60 minutes | SG 1.082 | 4 gallons | |||||

One teaspoon Irish Moss at 45 minutes. | ||||||||

Yeast: | Wyeast 1272 American Ale II Yeast in a one quart starter. Start at least 24 hours prior. | |||||||
Log: | Ferment one week at 68°F, transfer to secondary and ferment one more week at 68°F. | |||||||
Carbonation: | If kegging apply 2.5 volumes CO2. If bottling use 3/4 cup of corn sugar. Age for three weeks at 38°F then enjoy. |
