Single infusion mash at 149°F. With the low mash temperature, you may need to lengthen the rest time to 90 minutes to get full conversion. Mash out for 10 min at 160°F. Continuous sparge with 170°F water to collect 7.5 gallons in brewpot. | ||||||||

Log: | Ferment at 65°F for 7-10 days (or until yeast activity stops). Add 1 oz Amarillo dry hops for additional 7 days. | |||||||
Carbonation: | 2.3 volumes | Keg: 10.1 psi @ 40°F | ||||||
Keg and force carbonate to 2.3 volumes. |
