The Pursuit of Hoppiness

This recipe is slightly modified from the one presented in "Brewing Classic Styles" by Jamil Zainasheff and John J. Palmer. Should be tasty.

Type: All grain Size: 6 gallons
Color:
10 HCU (~7 SRM)
Bitterness: 64 IBU
OG: 1.066 FG: 1.012
Alcohol: 7.0% v/v (5.5% w/w)
Water: 1 Tbs 5.2 stabilizer, 1 Tbs gypsum.
Grain: 10 lb. American 2-row
1 lb. American Munich
1 lb. American crystal 20L
6 oz. American crystal 40L
Mash: 80% efficiency
Single infusion mash at 149°F. With the low mash temperature, you may need to lengthen the rest time to 90 minutes to get full conversion. Mash out for 10 min at 160°F. Continuous sparge with 170°F water to collect 7.5 gallons in brewpot.
Boil: 60 minutes SG 1.053 7.5 gallons
1 lb. Corn sugar
Hops: 1 oz. Magnum (13.5% AA, 60 min.)
.25 oz. Centennial (8.7% AA, 60 min.)
.75 oz. Centennial (8.7% AA, 10 min.)
1 oz. Simcoe (13% AA, 5 min.)
2 oz. Amarillo (aroma)
Yeast: Safale US-05 cake from prior batch of IPA.
Log: Ferment at 65°F for 7-10 days (or until yeast activity stops). Add 1 oz Amarillo dry hops for additional 7 days.
Carbonation: 2.3 volumes Keg: 10.1 psi @ 40°F
Keg and force carbonate to 2.3 volumes.
