Bitterness: 81 IBU
OG: 1.074 FG: 1.014
Alcohol: 7.7% v/v (6.1% w/w)
Water: Tapwater with 1 Tbs 5.2 Stabilizer and 1 Tbs gypsum.
Grain: 16 lb. German Munich
Mash: 75% efficiency
Single infusion at 150°F for 60 minutes. Mashout via 5 quart decoction added to 5 quarts boiling water, brought to boil and reintroduced to mash and held for 10 minutes. Continuous sparge with 170°F water to collect 8.0 gallons in the brewpot
Boil: 90 minutes SG 1.056 8 gallons
Add last 4 oz of hops at flameout and allow 15 minute hop rest (with whirlpool) before cooling.
Hops: 2 oz. Zythos (8.7% AA, 90 min.)
1 oz. Zythos (8.7% AA, 10 min.)
3 oz. Zythos (8.7% AA, 5 min.)
4 oz. Zythos (8.7% AA, 0.01 min.)
2 oz. Zythos (aroma)
Yeast: White Labs 007 in a 2000 ml starter.
Log: 10 days primary at 65F. 7 days secondary with 3 oz dry hops at 65F. Keg and force carbonate.
Carbonation: 2.0 volumes Keg: 9.9 psi @ 47°F
