Rayface IPA

This is my style of IPA. It's got an assertive but clean bitterness and a floral and slightly pungent hop bouquet. It's a bit higher in OG that I was shooting for due to better than expected efficiency, but hey, that's fine with me! Awesome IPA!

Type: All grain Size: 5 gallons
Color:
16 HCU (~10 SRM)
Bitterness: 81 IBU
OG: 1.074 FG: 1.013
Alcohol: 7.8% v/v (6.2% w/w)
Water: 2 tsp gypsum were added to the mash.
Grain: 9 lb. Beeston's Maris Otter
1.5 lb. Durst Munich
0.5 lb. DWC Aromatic
0.5 lb. DWC Biscuit Malt
1 lb. DWC CaraVienne
Mash: 79% efficiency
Mashed at 152 degrees for 2 hours (had to run an errand) No mashout done. Sparged w/ 170 degree water until 6.75 gallons were collected.
Boil: 90 minutes SG 1.055 6.75 gallons
Forgot the Irish Moss. Didn't make a difference, I think. The aroma hops were as follow: 1/2 oz Crystal + 1/2 oz Santiam at 5 min., 1/2 oz Crystal + 1/2 oz Santiam were steeped while chilling.
Hops: .5 oz. Yakima Magnum (15.1% AA, 60 min.)
.5 oz. Yakima Magnum (15.1% AA, 30 min.)
2 oz. Santiam (6.8% AA, 15 min.)
.5 oz. Santiam (6.8% AA, 10 min.)
.5 oz. Crystal (4.7% AA, 10 min.)
.5 oz. Santiam (aroma)
.5 oz. Crystal (aroma)
1 oz. Crystal flowers (dry-hop) (aroma)
Yeast: A one liter starter w/ Wyeast 1028 London Ale was prepared 24 hours in advance.
Log: Primary fermentation at 66 degrees in glass for 8 days. Secondary in glass for 2 weeks at 64 deg. w/ the whole Crystal flowers.
Carbonation: 2/3 cup glucose for priming.
Tasting: Although it would seem that ~80 IBU's would be excessive, the Yakima Magnums give a very clean bitterness, along w/ a spiciness and flavor that works very well with the Santiam and Crystal hops. The hop flavor is quite complex, and is not the one dimensional "citrusy" profile of many IPAs. I really love Magnum & Crystal hops! Match made in heaven. As for the Santiams-- they added a pungency that I never tasted in any other American hop. They added nicely to the hop flavor. The aroma is quite spicy w/ slight citrusy notes. The malt profile of this beer is quite big. The combination of Maris Otter, Munich and Aromatic provides a wonderful base for the hops. It's got "chewy" maltiness. This beer was an absolute success. This is why I love homebrewing.
